Ingredients
  • Raw unsalted cashews (2, 8-oz bags)
  • ½ cup of olive oil
  • ¼ cup of wild rice
  • 1 red onion (or yellow onion)
  • 3 cloves of fresh garlic (or 4 tablespoons of minced garlic)
  • ¼ cup of cayenne pepper
  • 1 tablespoon of sea salt
  • ¼ cup of thyme leaves
  • 1 cup of water
Directions
  1. Soak the cashews in ½ cup of water for 15 minutes. Drain in a colander.
  2. Boil the water, then add the wild rice. Boil the wild rice for 20 minutes, and drain the water.
  3. Sauté the onions and garlic for 8 minutes, or until caramelized. Then top with the pepper and thyme, and stir thoroughly for even distribution.
  4. Place the sautéed onion and garlic, soaked cashews, and cup of water in a blender. and blend until creamy and smooth.
  5. Pour the blend back into the pot, adding splashes of water until it reaches your desired consistency. Add any herbs or other toppings you'd like.
