Ingredients
- Raw unsalted cashews (2, 8-oz bags)
- ½ cup of olive oil
- ¼ cup of wild rice
- 1 red onion (or yellow onion)
- 3 cloves of fresh garlic (or 4 tablespoons of minced garlic)
- ¼ cup of cayenne pepper
- 1 tablespoon of sea salt
- ¼ cup of thyme leaves
- 1 cup of water
Directions
- Soak the cashews in ½ cup of water for 15 minutes. Drain in a colander.
- Boil the water, then add the wild rice. Boil the wild rice for 20 minutes, and drain the water.
- Sauté the onions and garlic for 8 minutes, or until caramelized. Then top with the pepper and thyme, and stir thoroughly for even distribution.
- Place the sautéed onion and garlic, soaked cashews, and cup of water in a blender. and blend until creamy and smooth.
- Pour the blend back into the pot, adding splashes of water until it reaches your desired consistency. Add any herbs or other toppings you'd like.
